Eggless spelt flour pancakes

Pancakes! During this quarantine period, I’ve seen SO many pancake posts. We don’t generally make pancakes at home, but cravings came in and I had to make them. Pancakes are a simple recipe in general. However, we don’t eat eggs at home, so I had to come up with an eggless recipe.

Personally, I don’t prefer really thick pancakes. This recipe makes thin pancakes which are still fluffy, light and soft. I have used spelt flour in this recipe as it’s easier for the body to digest and is a good source of fibre too. I chose to pair the pancakes with blueberries, almond chocolate butter, maple syrup and passion fruit yogurt.

Eggless spelt flour pancakes

Servings - 18 mini pancakes (~7 cm wide)

Prep time - 10 minutes

Cooking time - 10 minutes

Ingredients

Whole grain spelt flour — 1 cup

Brown sugar — 2 tsp

Baking powder — 2 tsp

Milk (full fat) — 3/4 cup

Yogurt — 1/2 cup

Cream cheese — 1 tbsp

Butter (salted) room temperature — 1 tbsp

Vanilla extract (not essence) — 1 tsp

Ground flax seeds — 1 tsp

Filtered water — 1 tbsp

1. Prep your flax egg. Add ground flax seeds and filtered water to a small bowl, stir and refrigerate for ten minutes.

2. Mix all dry ingredients in a bowl — spelt flour, brown sugar & baking powder.

3. In a separate bowl, mix wet ingredients — 1/2 cup milk (save the rest for later), yogurt, cream cheese, french butter, vanilla extract and flax egg. Whisk until well combined.

4. Mix the wet ingredients into the dry ingredients in a mixing bowl, and whisk together till combined. It is important not to over mix the batter. It is okay if you still see a few lumps.

5. Add the remaining 1/2 cup of milk to the batter and give it a stir. Let the pancake batter rest for ten minutes.

5.Heat a mini pancake pan or non stick pan on medium heat and lightly brush with butter.

6. Add ~ 1/8 cup of batter into each pancake mould (my pancake pan moulds are about 7 cm wide). Cook until you see bubbles appearing on the top and you should be able to easily flip the pancake with a non-stick spatula.

8. Cook the other side of the pancake till you achieve a golden brown color. Make sure to carefully watch the pancakes as they can burn easily.

Enjoy hot pancakes with condiments of your choice! I chose blueberries, maple syrup, passion fruit yogurt & almond chocolate butter.  To make the passion fruit yogurt you simply add some passion fruit juice and a tiny bit of sweetener of your choice to the yogurt.   

Note: Please note different flours take different amounts of water for the batter — for example, spelt flour is more water soluble than wheat flour. If you are planning on changing the flour, you may have to adjust the amount of liquid you are using. Also, please note that different flours result in different textures too.
